Where Viking burners go wrong
A Viking burner that lights on half its ring, burns yellow at the tips or roars and lifts off the head almost always has partly blocked ports or a cap out of alignment. High output magnifies small obstructions, so a little debris shows up as an obvious flame fault.

Rebuilding rather than replacing

My Viking burner flame is yellow and noisy. Is it safe to use?
Stop using that burner. A yellow or lifting flame means combustion is wrong, usually from blocked ports or a misplaced cap, and it can produce soot and carbon monoxide.
Why does my Viking burner go out when I let go of the knob?
On models with a flame-safety valve, that points to the thermocouple or valve. Replacing or realigning the faulty part is a routine repair on this equipment.
Is a very old Viking cooktop still repairable?
