That construction is meant for decades of service. When a burner or oven fails, the repair is a component swap rather than the end of the unit, and the kitchen can usually return to full service without waiting for new equipment.
Pilots under continuous use
Standing pilots on a busy line live with constant heat, grease and cleaning chemicals. A pilot that keeps going out, or will not stay lit once the button is released, usually has a dirty orifice or a weakened thermocouple; the safety valve is designed to shut off gas until the flame is proven. Those parts are replaced and the pilot reset, never bypassed.
Relighting a pilot following the unit's own instructions is a normal kitchen task. Cleaning orifices or replacing the thermocouple is technician work.
Grease, carbon and uneven flame
Burner ports on a commercial range clog with grease and carbon far faster than on any domestic cooktop. The result is a flame that lifts, yellows or burns on part of the ring only.
Cleaning restores most burners; heavily fouled or cracked ones are replaced. A yellow, sooting flame deserves prompt attention because it signals poor combustion.
How gas work is closed out
Every Vulcan gas repair begins with the supply shut off at the appliance and finishes with each joint we touched tested for leaks before the range goes back into service. A busy night is no reason to skip that step.
Fryers and steamers in the same kitchen bring their own service needs, from high-limit and thermostat faults on fryers to scale in steamer water circuits, and can be looked at on the same visit.

Is it worth rebuilding an old Vulcan range?
Usually. The body and manifold outlast the parts that wear, and those parts remain replaceable.
Why replace an oven thermostat rather than adjust it?
Some mechanical thermostats can be recalibrated, and we do that when the unit is sound. One that drifts again after adjustment, or will not cycle properly, is replaced.
