Vulcan builds commercial cooking equipment around heavy gas manifolds and individually replaceable burners, pilots, thermostats and safety valves, designed to be rebuilt in place across a service life measured in decades. Fryers and steamers extend that with oil circuits and water circuits of their own, each with its own maintenance requirement. Commercial cooking equipment is built around heavy gas manifolds, standing pilots or spark ignition depending on the generation, and mechanical thermostats and safety valves that are individually replaceable — which is why a twenty-year-old Vulcan range is still a repair proposition. Fryers and steamers add their own service categories: oil circuits and high-limit protection on one, water treatment and descaling on the other.
