Gas work on this equipment follows a fixed routine: the supply is shut off and isolated before a part is touched, and each joint that was opened is checked for leaks before the kitchen gets its oven back. That applies to a pilot assembly just as much as to a valve.

Pilots and ignition

Depending on generation, Vulcan burners use standing pilots or spark ignition. Burners running through long service days foul their pilots and igniters, and ignition becomes unreliable. Carbon and grease build up quickly around a pilot in a busy kitchen, and a pilot that burns weakly may not hold the safety valve open.

Cleaning or replacing pilot and ignition components restores reliable lighting. The gas valve is only replaced if testing shows it is faulty.

Thermostats, safety valves and doors

Oven thermostats drift under constant use, and safety valves weaken. A cavity that no longer holds temperature through a service is usually one of these, or a door seal that has worn.

Door seals on commercial ovens take heavy use, and a worn one lets heat escape faster than the burner can recover. We check the seal before the thermostat. Convection ovens also depend on their fan, so a cavity that cooks unevenly on one side prompts a check of the fan and its motor.

Grease and carbon

Burner ports obstructed by grease and carbon produce uneven flames and slow heating. It is common in busy kitchens and is cleared during service. Regular cleaning by the kitchen staff helps, but carbon inside the ports usually needs the burner removed.

Fryers and steamers bring their own requirements: high-limit protection on fryers, and descaling for steamer water circuits. We service those alongside the ovens when asked.

    Almost always. Vulcan expects its ranges to be overhauled rather than thrown out, and each burner, pilot, thermostat and valve can be swapped on its own. The heavy cast construction rarely wears out, so most repairs address wear parts rather than the structure.

  • How do you handle gas work on commercial equipment?

    We shut the supply off and isolate it before starting, and every joint we disturb is leak-checked before the equipment goes back on the line. There are no shortcuts on that, however busy the service.
