Overshoot points one way, undershoot another

An oven that runs hot and will not cut its heat is usually a relay on the board stuck in the on position. The element is simply obeying instructions.

An oven that falls short tends to have a sensor reading high, so the board believes it arrived early. Comparing the sensor's resistance with a probe reading decides which case we are looking at.

Spark modules on the gas ranges

Gas GE ranges light their surface burners from a spark module, and a failing module can click on every burner together or refuse to spark at all. That sits outside the oven cavity but often turns up on the same call.

Moisture after a boil-over is a common trigger. Letting the cooktop dry out completely before trying again is a sensible, safe first step. If the clicking persists once everything is dry, the module or a cracked electrode is tested on site.

Worn surface switches

Behind each radiant-element knob on electric GE ranges is an infinite switch whose contacts wear with use. A zone stuck on high, or unable to climb past low, usually traces to that switch.

It is a knob-by-knob fault, so we test each switch and replace only the one that has failed. Swapping all four switches because one has failed is rarely necessary on a GE, and we do not recommend it.
