Running hot: sensor or relay?
A GE oven that sails past its set point has two usual suspects. A sensor reading low tells the board the cavity is cooler than it is, so the board keeps heating; a relay stuck closed keeps heating whatever the board says. The first shows as wrong resistance at the sensor, the second as voltage at the element when the board has asked for none.
That second fault deserves respect. An element the controls cannot switch off should be isolated at the breaker until it is repaired.
Running cool: often the door
Before any electrical testing on a cool GE oven, we open and close the door and watch how it settles. Hinge springs weaken over the years and let the door rest a fraction open, while a hardened gasket leaks along the top edge; heat leaves faster than the element can replace it, and the display shows a set point the cavity never reaches. Hinges and a gasket cost far less than the thermostat work people expect.

Gas GE ranges: the spark module
If every burner clicks at once, or one keeps clicking after it has lit, the spark module or a switch on one of the valve stems is usually responsible, often after a boil-over has wet the switch. Leaving the cooktop to dry for a day sometimes clears it.
Persistent clicking, weak ignition or any smell of gas calls for a technician; the valves and the supply line are not owner territory.
