Output and cube appearance are the real measures. Both degrade gradually as scale and biofilm build, so a machine has to be judged against its rated production rather than on whether ice is still reaching the bin. A water job before an electrical one

Scale on the evaporator surface slows freezing and coarsens the cube; biofilm in the circuit makes the ice cloudy and can give it an odour. Descaling and sanitising on the manufacturer's schedule prevents most of this.

We start every Hoshizaki visit with the water circuit. Only once that is clean do we look for a failed component. Harder water in some outer towns makes the schedule more important still.

Circulation and harvest

The design relies on water flowing steadily over the plate. A failing water pump or a float switch that misreads the reservoir stops that flow, and production falls or stops altogether.

A hot-gas valve that does not open properly leaves cubes fused to the evaporator. The machine keeps trying to harvest, and the bin fills slowly or not at all. Both faults are tested directly before any part is ordered.

Heat rejection and parts

An air-cooled machine in a kitchen draws in grease and dust, and a fouled condenser lowers output as surely as scale. We clean it as part of the service.

Parts come through a specialist foodservice channel. We confirm availability at diagnosis rather than assuming a same-visit finish. Cleaning the condenser often restores output alongside descaling.
